Midi works exactly the same way as with a VST synth, you just don't see it working as the computer does everything for you and then hides it from the screen.
When you insert a vst into your DAW your computer creates all the necessary midi communications with that vst. When you are using external gear you need to tell the computer exactly what you want to do with the midi. You'll need a 5-pin midi-usb device to make it happen (often found in soundcards nowadays). You'll tell the computer where to send the midi (to that soundcard), what channel (5 pin midi has 16 channels), and then you will create you piano roll sequence. You'll need to tell the hardware what channel it should look at for its incoming midi messages. Then you just plug in the synth to an audio interface, hit record in your DAW and its finished.
